Tee got me thinking that I might not have enough, so I got another butt - 17 pounds of pig on the kettle since 7:00 AM. Smoking at 250 now.

I'm at 81 degrees. Took them out of the fridge at 4 am and the probe indicated degrees 44 when I inserted it. I guess I could have left out overnight (covered) as it was on 60 in the apartment.

99 degrees and have the heat regulated at 250.

141 meat temp and still at 250. My app has a cool graphing function.

I hit the wall in the 140s - only at 148. Fluctuations in temps from 225 to 250 due to a fuel-pile burnout.

I'm going to be at this for a while.

It FINALLY hit 195 at 4 AM. Wrapped the butts in foil, towels and put into a cooler.

I then put a dozen apples on the grill to smoke. The plan was to sleep two hours, get the apples, pull the pork.

Slept five - pulled the pork and the apples were screwed.

Bone slid right out and I mixed with apple juice and butter - a little bit of sauce too. Wrapped and placed in the oven - turned off. That was at 10:00. At 1:30, turned on the oven to 150 and the food was perfect for 3:00.

The output was good, but I've had much better. A touch too smokey - not enough true pig taste. Next time, I'm going with a higher temp and faster cook. Maybe no water pans, but that also served as a heat shield.

Will try brisket next.

In a nutshell, I'm exhausted and hung over - too much time to drink when the smoke takes that long! I even held off on having a beer until 6 pm - but by 4 am, the entire 12 of Hop Stoopid was gone and three of its kind that were already in the fridge.

Had a 6'er of Stoopid myself yesterday. Didn't smoke a pork butt but but I did make one in my wife's new Instapot. Took 1.5 hours for a 12 pound pork butt. Pulled off pretty easy. Not near as good as smoke but not terrible.

That's really all ya need of Stoopid ... unless you're stupid like me.

I don't own a crock pot, but I've bought two ... (different story).

The ex would try different recipes in a crock pot and not a single one ever was good. We ruined several nice pork loins - I refuse to have one now.

I changed jobs and Springfield is not my responsibility any longer, but I'll time a trip to STL to allow for a steakhouse meal.
